Jalapeño Popper Chicken Casserole {low carb, keto}

This low carb cauliflower jalapeño popper chicken casserole is keto-friendly with only 5 gram net carbs. Quick assembly and dietitian-approved!

Ingredients
  

  • 4 oz cream cheese
  • 3 eggs
  • 2 Tbsp hot buffalo sauce
  • 1/2 tsp garlic powder
  • 1 lb chicken breast raw, cubed
  • 1 pkg cauliflower rice frozen
  • 2 jalapeños seeded and chopped
  • 3/4 cup shredded cheese

Instructions
 

  • Preheat oven to 375°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Blend cream cheese, eggs, hot sauce, and garlic powder until smooth.
  • In a large bowl, combine cream cheese mixture, chicken, cauliflower rice, and jalapeños. Pour into baking dish and press mixture into an even layer. 
  • Sprinkle with cheese. Bake for 40 minutes until chicken is cooked through; broil during last 5 minutes of cooking.
