Instructions
Using a handheld peeler, remove skins from cucumber. Cut into quarters lengthwise and grate or finely chop. Add to a medium mixing bowl.
Zest and juice one lemon. Add to cucumber along with remaining ingredients; mix well.
Serve immediately or refrigerate for up to 4 days.
