Instructions
Preheat air fryer to 400F.
In a large mixing bowl, add shredded hash browns, diced bell peppers, diced ham, oil, salt and pepper; toss to combine.
Using your hands, add mixture to air fryer, avoiding the center holes of the air fryer (if your system has these) and loosely pile the shredded potatoes up against the walls of the air fryer.
Cook for 9-10 minutes (*11-12 minutes if using frozen hash browns). During the last 30-45 seconds of cooking, cover with shredded cheese.
Garnish with diced tomatoes and green onion. Top with an over-easy egg, if desired.
